Buckwheat Pancakes

 
 

1 1/2 cups buckwheat flour

2 teaspoons baking powder

1 egg

1/2 mashed banana 

1/2 cup milk (plant, cows or water)

1/4 teaspoon vanilla paste 

1 tablespoon collagen powder 

 

Sift flour and baking powder. Make a well in the centre and add the egg, banana and milk. Whisk to combine. Add vanilla and collagen.

 

Melt butter or ghee in a pan and spoon in the buckwheat batter once it's nice and hot. 

 

Flip after a minute or so and serve with maple, peanut butter, berries, banana, or anything you love to put on your pancakes!
